A Bowlful Of Winter Warmth For You In The Form Of Vegetable Soup

Last night we attended a party celebrating the union of two love-birds who are about to get married the coming week. There we noticed a change in how people have been dressing up for such gala nights. While the men were donning three-piece suits with fine cut, women were spotted in silk and crepe sarees layered with sequined shawls. Is the winter here? Definitely! 

This time of the year is all about slipping under your warm quilt and enjoying the hot homemade soups every night. If you’re as excited as the Cauldron Sisters, let’s begin with sharing some varied recipes of soups with all of you.

Today is about the hearty and nutritious vegetable soup which is a family-pleaser, according to us. The recipe is full of vegetables that are easily available in the market. Scroll down to learn how you can make this comforting, warm veggie soup by C-Sisters!

Ingredients

  • Olive oil – 1 tbsp
  • Chopped onion – 1
  • Chopped carrot – 1
  • Chopped red bell pepper- 1
  • Minced garlic cloves – 4
  • Chopped green beans – 2 cups
  • Chopped tomatoes – 3
  • Vegetable stock – 4
  • Oregano – 1 tbsp
  • Dried basil – 1 tbsp
  • Dried thyme – ½ tbsp
  • Salt to taste
  • Black pepper – ½ tbsp
  • Chopped coriander

Method

  1. Heat olive oil in a pan. Sauté onion and carrot for one minute.
  2. Add garlic and bell pepper. Sauté.
  3. Once they soften, add green beans and fry well.
  4. This is followed by adding tomatoes and vegetable stock. Stir well until the mixture comes to a boiling point.
  5. Cover with lid and cook it for about next 15-20 minutes.
  6. Sprinkle thyme, basil, and oregano. Stir well.
  7. Transfer the mixture in soup-bowls. You can let the vegetables stay in the soup or use a sieve to filter out the liquid.
  8. Garnish with chopped coriander.
